Castor River Rice – Risotto Style

-1 small onion
-
1 medium leek
-1 tbsp chopped garlic
-1 tbsp olive oil
-1 cup Castor River Farms long grain brown rice
-2 cups chicken stock
-1 cup diced tomatoes
-1 tbsp butter
-1 tbsp fresh parmesan

Sautée onion, leek, chopped garlic, and olive oil until onions are translucent. In rice cooker, add 1 cup brown rice, chicken stock, diced tomatoes, and salt and pepper to taste. Let cook until rice is al dente, add butter and fresh parmesan after rice reaches desired texture.

Optional: add a pinch of chili flakes for some extra kick.



Hunter Family Herbed White Rice


-1 tablespoon butter
-4 scallions sliced thin
-1 cup chicken broth
-2 cups water
-2 cups Castor River Farms long grain white rice
-2 teaspoons dried minced onion
-1 teaspoon salt
-½ teaspoon pepper
-¼ cup chopped parsley

Heat the butter in a medium saucepan over medium heat. Add the scallions and cook for 2-3 minutes. Add the rice and stir until rice is fully coated with butter. Add 2 cups of water and 1 cup chicken broth and bring to a boil. Add the onion, salt and pepper. Cover and reduce heat to a simmer. Cook until the liquid is absorbed and the rice is al dente - 18-20 minutes. Remove from heat; fluff the rice with a fork and stir in the parsley. Enjoy! (This can be made in a rice cooker as well.)



Grandma Webb's Sweet Breakfast Rice

-1 cup cooked Castor River Farms long grain white rice
-3 tbsp unsalted butter
-1/2 cup sugar
-1 cup milk

Combine all ingredients and serve for a quick and delicious breakfast. Pairs well with bacon, but feel free to add raisins, cinnamon, fresh fruit, or whatever ingredients you desire!
